SONTUOSA

NERO DI TROIA ROSATO IGT

Nero di Troia, one of the oldest native grape varieties in Puglia, is a true emblem of our region. Thriving in the Tavoliere’s warm dry climate and fertile calcareous soils, these grapes yield high-quality wines.

We hand-harvest carefully selected grapes from our organic vines to produce Sontuosa wine. The wine mesmerizes with its pale pink color and delights the palate with its fresh, harmonious character.

Sontuosa embodies the essence of a premium rosato, beginning with its name—a nod to elegance and luxury—and crafted to elevate life's most treasured moments.

The label’s design elegantly blends relief patterns with artistic details, depicting a gender-neutral regalfigure featuring a tear at the mouth, which reveals the unadorned contents of the bottle as somenthing untold yet that you have to experience.

The rip on the mouth is a stylistic choice that invites personal interpretations of beauty, narrating the story of a wine that transcends words and traditional classifications. It is an experience meant to be lived, as mere descriptions alone cannot fully capture its essence.

A STORY WE WRITE TOGETHER WITH YOU

Each vintage is like a chapter in an extraordinary and passionate story, where the work in the vineyard, the changing seasons, and the perception of those who taste our wines are the main characters. When we tell the stories of our wines, we do so year by year, with each chapter introduced by a title that captures the essence of that particular vintage. Each story is unique, yet always true to its own identity.

The history of Sontuosa

CHAPTER 1

2023 The Year of Challenge

Vintage 2023
The first buds of Nero di Troia emerged around April 20th
encountering a rather harsh spring. The growth of the buds was slowed down by below-average spring temperatures. The accumulated rainfall during this period, coupled with the rise in temperatures at the end of June, allowed the plants to have a lush, leafy appearance, providing active photosynthesis. Under these conditions, protecting the Nero di Troia from Peronospora (Downy Mildew), a variety particularly sensitive to this disease, was undoubtedly the most complex issue to address. Precision organic viticulture enabled us to bring healthy grapes to the winery. The soil's water reserves facilitated potassium accumulation, leading to an increase in grape pH as they ripened. To avoid a decrease in acidity, the harvest was carried out around the second week of September.
Winemaking
After crushing, a pre-fermentation cryomaceration process is performed for approximately 2 hours at 50-54°F (10-12 °C
This allows the must to acquire the characteristic coral hue of Malbec rosato. As Malbec is a variety rich in anthocyanins, a brief maceration period is adequate to achieve a vibrant and stable pink color. The must is then allowed to settle for about 36 hours at 50°F (10 °C), enabling suspended particles to precipitate. Once racked, the must is initiated into alcoholic fermentation at around 57-61°F (14-16 °C).
Aging
The wine is aged sur lies in stainless steel tanks for about 6 months
During this period, weekly battonage is performed to ensure better protection against oxidation. At the end of the aging process, the wine is bottled and rests for another 2 months before release.

Color: Pale pink.
